
Anyone who knows me, knows that I love baking. It can sometimes be an addiction. I do go through phases. Sometimes I will go a while without baking, usually during a health kick when I’m in serious clean eating mode. However, most of the time I will have ingredients for cookies on hand at all times.
My sister-in-law shares a mutual Β love of baked goods. Occasionally, we will have a little baking session and bake cookies or cupcakes. Well, over the weekend she brought a recipe over, and in the process of baking we somehow got distracted by the babies, to the point of completely messing up the ingredients. I was pretty worried they weren’t going to turn out right. We had way too much in the dry ingredients and not enough in the wet ingredients. Our dough was crumbly like pie crust. So I improvised. We crossed our fingers. Everyone had their hopes set on birthday cake cookies, so we had to follow through! The cookie pressure was on!
To my surprise the adjustments we made actually turned out amazing. I must say, these are probably the best cookies we’ve ever made. Granted, they’re also probably the sweetest cookies you will ever eat. But hey, we’re making cookies, not salad. SPLURGE A LITTLE FOR HEAVENS SAKE! π
Recipe should yield about two dozen cookies.
- 1 and 1/4 cup flour
- 1 box yellow cake mix
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup white sugar
- 1/2 cup brown sugar (packed)
- 1 cup or 2 sticks unsalted butter (softened)
- 1 egg
- 1 teaspoon vanilla
- 1/4 cup sprinkles
- 1 cup white chocolate chips
Preheat Oven to 350Β°F
- In a large bowl, sift flour, cake mix, salt, and baking soda together.
- In a separate bowl, cream butter and sugars together on medium speed until smooth. Add vanilla and egg and continue mixing until combined.
- Gradually add dry ingredients to wet ingredients, mixing on low, until all is incorporated.
- Add sprinkles and chocolate chips mixing by hand. Dough should be on the dryer side but able to form a ball with your hands.
- Shape balls about 1.5 tablespoons worth of dough. Slightly flatten balls and place on a parchment paper lined baking sheet.
- Bake for 12 minutes. Allow to cook for 5-10 minutes.
- Hide cookies from your kids so you can have a special treat when they go to bed. π

My daughter too. If you tell her there’s sprinkles in something it’s like she turns into another person lol
